After college, I gleefully got sucked into the restaurant industry and never got out despite two graduate degrees and a few, feeble attempts at extrication. In 2006, I landed in Vail Valley, started serving tables at The Ritz-Carlton Bachelor Gulch and unwittingly began directing my career toward wine.</image:caption>

Four years later, after learning the ropes from some extremely talented colleagues, I began running the Beverage program at Wolfgang Puck Spago at The Ritz. From 2011 to 2017, I focussed on developing an award-winning wine list supported by world-class service. During the off-season, I traveled to wine-growing regions throughout Europe and the US to better understand how the incredible wines I was serving every night were made.</image:caption>

      <image:title>Carlton Hill Vineyards - Carlton Hill Estate “ Tournament Reserve” Pinot Noir, Yamhill-Carlton, 2017</image:title>
      <image:caption>An engaging and brilliant perfume of wet violets, concentrated hibiscus, freshly crushed blueberries and pink peppercorn elevate the wine from the glass the moment it’s poured. The palate is restrained as expected from this relatively young Carlton Hill Reserve Pinot Noir. The firm tannins have yet to fully soften, but flavors of dark red cherry, blackberry and huckleberry tell us what this youthful reserve will become. After an hour in the glass, the fruit flavors darken and deepen and the bright acidity lifts the tannins to a long, contemplative finish. While the 2017 Tournament Reserve is a beauty right now, best to cellar a case and drink between 2024 and 2028.       <image:caption>Jay started making wine in the Willamette Valley over twenty years ago, but not until 2010 did he begin experimenting with making “Black Chardonnay.” Let’s be thankful he never looked back. Since 2011, Jay’s EIEIO chardonnays have delivered richly textured, luscious wines with great depth supported by balanced acidity. While his wines are reminiscent of those from other great winegrowing regions, it is best to avoid comparisons; because though his chardonnays flirt with Meursault they dance by themselves. Jay’s 2016 “Yates Conwill” Chardonnay from the Willamette Valley is no exception. And with only 18 cases remaining of the 75 cases he produced, I recommend you grab some fast. The rolling contours of the Yates Conwill vineyard are tucked into the foothills of the Oregon Coast Range near the far western edge of the Yamhill Carlton AVA. At 350 feet above sea level, the aspect is south-to-southeast facing and the vines enjoy maritime influences, so in a warm vintage such 2016, the vineyard stays cooler than most sites in the region. The soils are shallow marine sedimentary over fractured basalt forcing the vines to dig deep for water and nutrients while allowing the grapes to mature slowly throughout the growing season. Jay harvests his chardonnay from Yates Conwill relatively early allowing the vineyard to bring freshness and acidity to the final wine. The grape clusters are picked in the wee hours of the morning and once they arrive to the winery, the black magic begins. The 2016 Yates Conwill Chardonnay is pale gold with aromas of bright lemon curd, orange peach, white flowers and rosemary blossoms. Delivering a lush, full-figured texture across the mid-palate, flavors of apricot and warm, sundrenched pineapple cruise toward the finish with notes of sesame and slightly toasted ancient grains. The wine is deep in flavor, rich in texture and will continue to draw you back to the glass. While drinking this wine is a contemplative experience on its own, you would be well-served to enjoy it with food. And when I think of chardonnay and food, my mind is drawn immediately to lobster: Do you want to a hit of lemon juice over the knuckle or do you want to dip the claw in butter? Which is to say, do you want to brighten your dish with acidity or enrich the dish with pleasure? The answer, of course, is both, which is why chardonnay goes perfectly with food. While Jay’s chardonnay will pair well with a broad range of dishes including steamed lobster, to me, it screams chicken thighs brined in Bubbies pickle juice, breaded in panko and pan-fried.       <image:caption>The vines of Winter’s Hill Vineyard near the top of the Dundee Hills reside in volcanic Jory soils at approximately 700 feet above sea level. By preserving the surrounding oak savannah, animal habitats, and prairie lands, the family-owned farm maintains a sustainable ecosystem that is managed entirely by hand. The 30-year-old vines that grew this wine are 100% Pinot Blanc, a traditional Champagne varietal that is rarely bottled on its own. The beauty of this wine, other than the brazen acidity it brings to your palate, is what it does with food. The wine is wonderful on its own with notes of fresh apricot, Pink Lady apple, lightly toasted sour dough and yellow peach; but, when paired with the right ingredients, the flavors of both the food and wine are heightened and extended. The most intriguing combination came when bringing Vietnamese fish sauce and Japanese Tsukudani kombu to an Italian charcuterie board. With Finocchiona, the wine seemed to aromatize the fennel and black peppercorn while balancing the salt and fat of the salami; a touch of fish sauce elevated those flavors with a deep hit of umami. With Parmigiano-Reggiano, the wine’s acid and bubbles seemed to attack the salt and sugar crystals in the sharp cheese as the creaminess of the cheese added texture and roundness to the wine; a touch of that slightly sweet kombu paste brought lime zest and white grapefruit flavors.  Putting all those flavors together with a sip of this Blanc de Blancs is a tasting experience worth pursuing.</image:caption>

      <image:caption>Martin Woods’ 2018 Gamay Noir was grown in a very warm vintage from two cool-climate sites: the loess soil of Tualatin Estate Vineyard in the far northwest of the Willamette Valley; and the marine sedimentary soils of Havlin Vineyard facing directly into the westerly winds of the Van Duzer Corridor.   The cooling nature of these sites is evident in this wine with brightness and freshness of fruit sustained throughout. Aromas of wild strawberry leap from the glass with fresh rhubarb, and violets. Sweet-heart cherries and juicy hibiscus add to the textural experience with a luscious, mouth-watering mid-palate and long herbaceous finish of light cedar and pink peppercorn. Structurally, this wine shows it’s more-delicate side with mild tannins carried by bright acidity, a combination that affords a great opportunity to pair red wine with seafood. Moules Frites might be the perfect bistro pairing, but if I had my choice, I’d serve up Seared Sea Scallops over Farro Risotto topped with fried lardons and a Szechuan Peppercorn Saba.</image:caption>

Planted on volcanic soils in the foothills of the Oregon Coast Range, the maritime influence keeps the long summer days relatively cool while mitigating the risk of frost at the beginning and end of the growing season. These factors allow Riesling to mature slowly and fully ripen late into the autumn, affording an extended hangtime that brings layers of flavor and complexity to the final wine. The 2019 Martin Woods Riesling from Hyland Vineyard shows the essence of the site. Tropical notes of pineapple, mango and papaya lead the aromatic charge supported by Red d’Anjou pear and Honeycrisp apple. An exotic combination of cinnamon and coriander add to the sweet-scented perfume along with floral chrysanthemum and dried orange peel. Across the palate the tropical fruits yield to a phenolic texture of apple skin and pineapple rind with white peach at the finish. Underpinning all of these flavors is a persistent acidity that elevates and brightens the ripe fruit flavors throughout the tasting experience.  Contemplating food pairings for this Riesling is an international juggernaut; any number of regional preparations could work extremely well. Whether you are enjoying a spicy Indian garum masala, a crispy Szechuan pork belly or an Italian radicchio salad with mandarin, anchovies, and black olives, this wine will balance with structure and complement with flavor.  That said, back in my Spago days, Chef served up a dish that I can’t stop thinking about for this wine:  Veal Chop Lyonnais with rosemary-potato tartine, caramelized onions, bacon lardon and a Dijon mustard sauce to finish.</image:caption>

Eventually, when the grapes do achieve their optimal ripeness, they are perfectly suited for bottling sparkling wine or high-acid Chardonnay. Initially, the aromatics of this wine are restrained, showing notes of lemon custard, white flowers, lavender pollen, and an elusive minerality. The palate is citrus-driven, crisp and refreshing. After a few minutes in the glass, a complexity reminiscent of premier cru Chablis begins to show with tart pineapple, lemon zest, pie crust and wet clay. As the wine unfurls, that elusive minerality begins to step forward alongside the pronounced citrus notes with wet granite and salinity. Contemplating this wine on a hot summer day in McMinnville, a found myself drifting back to an amazing swimming whole on the Swift River in New Hampshire where pristine mountain water flows over old granite, picking up the soft golden hues of iron in the rock and coarse sand.  And if I am standing there in the sun, knee-deep in that river, drinking this wine not too far from the ocean, wondering what I should eat for lunch, it could only be one thing.</image:caption>

      <image:caption>“Parabellum” is about making incredible wine by being prepared for anything that harvest might bring: “If you want peace, prepare for war.”   The 2017 Parabellum Coulée is classic Force Majeure at a fraction of the premium price. Predominantly Syrah with roughly 15% Mourvèdre, the dark crimson wine fills the glass with aromas of pastrami and cured meats, blackberry preserve, celery leaf, white pepper, and light vanilla. Initially, the texture is chewy across the mid-palate while the dark berry fruit is constrained. With decanting and time, flavors brighten with ripe blackberry and cassis coming through, and aromas of violet and sweet cedar elevate the long, silky, mouth-watering finish. This wine is pleasurable to pair with food as it has the heft to handle grilled and roasted meats while bringing enough juicy acidity to refresh the palate. While the range is broad, I recommend roasting a leg-of-lamb stuffed with garlic, covered in olive oil and rosemary, and served with a cannellini bean puree and a freshly chopped parsley-mint gremolata.</image:caption>

Fermented after cold soak in concrete vats, it receives a gentle extraction before being barreled down to spend approximately 18 months in a small percentage of new French oak, utilizing both large format puncheons and barrels.       <image:caption>Our relationship with Granville began during that fateful vintage of 2014. That first year, Ayla Holstein, the better half of Granville Wine Co, and Kristin were both harvest interns at Belle Pente. These two strong, hardworking women became fast friends doing “punch downs” and digging out fermenters. Since then, Kristin married me, Ayla married Jackson, and children soon followed: Louie Holstein in 2018; Callahan Hunter in 2019 and O’Della Holstein in 2020.  As our families grew, our families grew closer. In 2019, after two years as Assistant Winemaker at Belle Pente, Kristin accepted that same position at Granville, becoming Jackson and Alya’s first and only employee. Kristin’s role at Granville would change over the ensuing years with pregnancy, motherhood and COVID-19 affecting daily life, but of course, that’s what it’s like to be part of a family.</image:caption>

We had more than a few laughs that day in the car and a few more when I toured the vineyard and tasted through the 2019 vintage a year later. The wines evolved over the course of an hour as did our conversation and pretty soon we decided to work together on this new venture in Colorado.</image:caption>

      <image:caption>While the O’Donnells were responsible for welcoming Kristin into the world of production, it was Evan Martin, Assistant Winemaker at Belle Pente in 2014, that taught her the day-to-day details of winemaking. Focused and intense, hardworking, thoughtful and above all meticulous, Evan’s skill in the winery was evident from day one.  Kristin worked alongside and learned from Evan for three harvests before he stepped aside in 2017 to launch Martin Woods, opening the door for a new Assistant Winemaker to join Belle Pente Vineyard. Having made his first few vintages at Belle Pente from 2014 to 2016, Evan was ready to hit the ground running when he left BP. He released his 2014 wines, constructed a fully operational winery in his garage and got busy expanding production from tiny to small. For someone like myself - contemplating his own uniquely-modeled wine company, Evan offered a glimpse of what one person could do with a bit of talent, focus and lots of hard work.</image:caption>

      <image:caption>Of all the friends and colleagues I’ve had the privilege of getting to know across the Willamette Valley, there is no one I find more endearing than my good friend David Polite, proprietor and resident of Carlton Hill.  David’s dry sense of humor and east coast attitude come drenched in a heavy dose of cynicism that I find irresistible. Sitting on the porch of his historical Carlton Hill farmhouse looking over his sea of vines, talking sports or politics, I could just as easily be staring out over the rolling waters off Cape Cod. The fact that David smokes a pipe and named his dog after his favorite scotch just adds to his charm. Thankfully, David’s Pinot Noirs reflect his more delicate side, the hopeful, sensitive aspect of his persona that expresses itself subtly, yet delightfully. Carlton Hill wines are beautifully aromatic with a delicate texture that is always backed by firm acidity. I am tempted to refer to them as “Burgundian” in style, but that’s not quite right. Like David, Carlton Hill wines are unique in their own way, independently defined, and a pleasure to be around.</image:caption>

      <image:caption>Kristin Cardwell and I met in 2009 while working together at Spago at The Ritz-Carlton Bachelor Gulch in Colorado. We became friends quite quickly, but, despite some half-assed efforts on my part, it wasn’t until early 2014 that we start dating. We got engaged in 2015, married in 2016 and moved to the Willamette Valley in 2017 to pursue her career in winemaking. The idea for Shovel Blanc was first conceived while Kristin was cleaning out a press during the harvest of 2015. Why not make a beautiful rosé and name it after the ubiquitous white shovel used in wineries all around the world? Why not, indeed! It took six years from conception for her idea to become a reality. In the spring of 2022, Kristin Cardwell Hunter released the first vintage of her ingeniously delicious Shovel Blanc Rosé 2021 from select sites across the Willamette Valley.       <image:caption>Jay McDonald is another gem of a human being that I’ve gotten to know over the past five years. A serious winemaker that doesn’t take himself too seriously – after all, he did name his winery after a nursery rhyme – Jay approaches winemaking like he does most things in life: head-on, no bullshit, and please, for f##k’s sake, no fools. And if you don’t get this vibe when you meet him, my guess is you arrived on time, asked good questions, loved his wines and drove off with a couple cases of seriously delicious Chardonnay and Pinot Noir. When I began developing Lemon Rock, I knew I needed to talk with Jay. His business acumen, commitment to standards, and overall capacity to operate as a one-man show are attributes I wanted to absorb and apply. And of course, EIEIO was on the short list of producers I absolutely wanted to work with and I needed the opportunity to pitch it to him. Since that meeting, Jay and I’s working relationship and ongoing correspondence have developed into what I expect will be a lasting friendship.</image:caption>

      <image:caption>I was first introduced to Force Majeure on a boondoggle of a work trip to Walla Walla in 2019. We were there to visit and taste with producers we already represented at Handcrafted, but my boss was on the prowl for more suppliers so there were some samples to taste when I rolled into town. After running my sales route that day, battling traffic to get out of PDX late that afternoon and finishing up the five-hour drive to Walla Walla, I was hoping to chug a bottle of crisp white wine and go to bed. Instead, my boss put these intensely dark reds in front of me and asked me what I thought about them. I had my doubts, I admit, not to mention an intense thirst for something else, but what I tasted was unlike anything I had tasted before. Deep, rich, concentrated wines that somehow maintained a sense of balance and elegance. I added my ‘yes’ vote to the consensus immediately. Handcrafted picked up Force Majeure shortly afterward and in February 2020 I worked the market with Todd Alexander, Force Majeure’s renowned winemaker. I didn’t know that it would be the last time I would have another person in my car for many months. At the end of the day, Todd invited me and the family to visit the estate for a few days, stay in their guest house, and get to know more about Force Majeure. We made tentative plans to put something on the calendar for April. Little did we know.</image:caption>

      <image:caption>We didn’t meet Jeanne and Dan until the summer of 2021 as I was getting Lemon Rock up and running. I was looking for a new producer of high-quality sparkling wine to compliment my small syndicate of talented winemakers when Kristin and Jeanne met at HIFI’s soft-opening. A couple of weeks later, Kristin was begrudgingly chasing Cal around their backyard while I got to know Jeanne, Dan and Corollary Wines. The wines were refreshing on that hot summer afternoon and the company lovely. We discussed working together and made tentative plans to do so. But, alas, I was not the only one to enjoy the sparkle of Corollary’s bubbly. By the end of the summer, Jeanne and Dan had sold out of their inaugural vintage before I could secure an allocation. This will not be the case in 2022.</image:caption>
